Spiced Pork Cubes Croquette with Mixed Salad
INGREDIENTS
1 Can | |
300g | Potatoes, boiled |
50g | Red and Yellow Cherry Tomatoes, halved |
10g | Plain flour |
1 Pc | Egg yolk |
2 tbsp | Cooking oil |
100g | Mixed green salad |
SEASONINGS
10g | Shallot, sliced | |
1 sprig | Coriander leaves | |
1 tbsp | Olive oil | |
½ tsp | Balsamic vinegar | |
½ tsp | Sugar | |
1 Pinch | Salt |
DIRECTIONS
1. Remove potatoes skin, boiled and mash
2. Add flour, egg yolk and salt into mashed potatoes.
3. Divide mashed potatoes into three portions. Roll each portion into a ball, fill the ball with Narcissus Spiced. Reshape balls to enclose the fillings.
4. Dust lightly with flour and pan-fry until golden brown.
5. Mix tomatoes and green salad with seasonings.
6. Decorate and serve.
